Would you fancy bulgar wheat, red lentil and kale pilaf? If yes, will type up recipe. If kale not your thing though.... We love it here... very tasty. Easy to make too.

I am not veggie/vegan but used to make this..

soak some cous cous in veg stock

chop spring onion, chillies and peppers. Stir fry these together with some sweetcorn and combine with cous cous - a bit of cheese melted on top would be nice too!

we're getting kale in the veggie box and I think its a winter crop. Nice fried in butter and garlic (isn't everything) or vegan marg.

Yes, Parsley soup is fab for vegan recipes

I would probably do chickpea stew with couscous & baba ganoush or lenil chili

Not a vegan only a veggie but make a lot of vegan food - veggie curry (usually chick peas) and what ever veg I have in - chili (kidney beans) and pasta sauce (usually use canelloni beans) - sometimes I add lentils to thicken and flavour with the appropraite spice/pesto (there is a vegan one you can get in health food shops which is lovely). The veg I normally use includes peppers/caugettes/Mushrooms/carrots/whatever I fancy or have in - good luck

True.
You can substitute cabbage or anything green though, we're still getting an abundance of cabbage and leeks in veg box. Savoy cabbage would be best.
Right - to serve 4
1/2 cup dried lentils
2 tbsp olive oil
1 medium onion, finely diced
2 cloves garlic
1 tsp cumin seeds
1 tsp mustard seeds
1 tsp ground coriander
1 cup uncooked bulgur wheat
3 cups chopped kale
2 cups veg stock
1/2 tsp salt
1/4 cup chopped olives (green or black)

Heat oil in heavy bottomed saucepan over med heat
Add onion until lightly browned
Add garlic, cumin, mustard and coriander and saute for a minute
Add bulgar and drained lentils - saute 3mins
add kale, stock and salt and bring to simmer
cover tightly, turning heat to lowest and cook for 25 mins.
Without disturbing lid, turn off heat and allow to stand 15 mins.
Transfer to serving dish and toss with fork.

It's very nutty and lovely hot or cold.
