Urgent baking ideas needed please

Can anyone help me please?

I am hosting a sort of sports clinic at the weekend (active hobby) and the forecast is wet and windy.

I wanted to make a ginger cake for afterwards but have had two late nights at work and have two full on days today and tomorrow.

Are there any recipes I can make quickly on Friday and Saturday please that have the qualities of ginger cake but don’t take three days to “develop” flavour?

Just looking for a recipe for a cake that’s satisfying and warming (sort of) eg not raspberries and cream.

Does Yorkshire Parkin need to rest a couple of days?

Nigella's sticky gingerbread is lovely and you can bake it in a foil tray and just cut it into squares making it ideal for transporting, especially if you get a tray with a lid.
