My favourites are
Parsnip, leek and apple soup
Cajun sweet potato soup
Curried cauliflower
and Miso soup
Beetroot & horseradish soup (but I never add the sherry or top with goats cheese as I can’t abide either!)

In the last week I have made:
Chicken noodle soup
Roberto soup - aka Italian sausage, kale and bean tomato stew
Spiced chickpea stew with coconut and turmeric - this is the Alison Roman one that went viral a few years ago
Udon noodles with hot stock, soy, butter and black pepper

And then, not even needing a recipe but literally just aromatics + veg + stock:

  • Carrot & coriander
  • Leek & potato
  • Broccoli and smoked cheddar
  • Tomato, sherry & cream

What a wonderful thread!! I love soup!

I love leek and potato, but I add a bag of rocket to it and blend. That's what I'm making this week.

Will definitely be stealing some recipes from this thread!

I bought a soup maker last year , one that does the sauté and soup . I was a. Bit dubious as I thought this just be hot vegetable water but it is really good.

No actual recipes but I like
tomato and chill
carrot leek and coriander- I don’t use cream in mine
roasted squash/ pumpkin

I have roasted onions in the freezer and any leftover roast potatoes or wedges get frozen. They are brilliant to add thickness..
Marigold vegetarian bouillon as. Stock (low salt one,the original is way too salty)

Ooh I love a soup thread! Sadly I can't give you a recipe for the amazing soup dh made last week, because he just made it up! I told him to write it down, but he didn't. It was spiced root veg soup with cream and it was one of the best I've ever had.
One of my favourites is HF-W's parsnip and ginger, from his Veg book. I'm also a big fan of the Covent Garden soup company's chicken, lemon and tarragon one. I used to buy it all the time, then they discontinued it so I had to make it!

It's a bit bland so I add a good teaspoon or more of cumin, coriander and smoky paprika. I also fry up the croutons in paprika.
Butternut squash can be substituted fir the pumpkin and add the stick sooner rather than later and it takes way longer for it to soften that the recipe says! But add the extra spice and it's yummy and filling.

Thank you all for this thread ! I tend to add too much chilli flakes to whatever soup Iv made … so they all taste the same ! Eyeing up the beetroot horseradish one … chilli can stay in the draw 🤣

Lentil and vegetable

Celery, carrots, onions, leeks all sauted then add stock, lentils, herbs de Provence, once soft blend to desired chunkiness
