Smoked salmon recipes

I have four kids. Three fairly normal ish eaters - will eat most things, one fussy.

I'm not a great cook, but I manage - have slow cooker, air fryer etc.

Tonight we discovered my fussy one loves smoked salmon - had it with white sauce and pasta, and it was a hit with the others as well. (And cheap and easy!)

He turns his nose up at fish pie though, and hates veg.

Any recipes that involve smoked salmon (I used the off cuts in a packet)?

No allergies or anything.

DS loved tinned salmon in an omelette when he was little! Not even sure now why I tried it but it worked... Smoked salmon would be nicer I'm sure. Of course, also the smoked salmon/ cream cheese sandwich combo is always good.

My DD loves pasta (she insists on fusilli) mixed with soft cheese, pieces of smoked salmon and chopped cooked broccoli or grated courgette sautéed a few minutes
Scrambled egg with smoked salmon
Baked potatoes with soft cheese and smoked salmon
Bagel with soft cheese and smoked salmon

Oh that looks lovely! We've never tried risotto tbf, but he likes rice so that could be a hit.

@Sunflowerpumpkin omlette is something he won't eat (but he loves scrambled eggs - so there's a meal!) but I've never thought to put it in one for myself.

Mix some in with cream cheese, chives and black pepper for a simple smoked salmon pate. Yummy with toast or a jacket potato.

As he likes the smoked salmon taste, you could try some of the "lightly smoked" salmon fillets. Cook it very briefly, flake, then stir into egg/cream mixture with some broccoli, peas or leeks and make a quiche.

Or what about savoury pancakes? You could make a white or cheese sauce, stir in the smoked salmon off cuts and any veg, and use to fill home made or bought pancakes. Heat the pancakes wrapped in foil in the oven while you are putting together the sauce.

google easy salmon terrine recipes. Sounds fancy but is basically some form of soft herby cheese wrapped in salmon. Can do individual ones.

also individual salmon quiches - can do with squares of pastry in a muffin or Yorkshire pudding tin. Add in the salmon then pour a bit of egg and milk or cream mixture on top

Another idea is macaroni cheese or cauliflower cheese with the lightly smoked salmon fillets under the sauce at the bottom of the dish.

YY to smoked mackerel too! It doesn't even need to be peppered. Both salmon and mackerel are flavourful so a little goes a long way in pasta, rice and egg dishes, are great in fish cakes (which reminds me of smoked haddock as well).
A warm salad of roasted cubed potatoes and beetroot, chopped smoked salmon or mackerel and halved cherry tomatoes over a bed of salad leaves, dressed with a little lemon juice and olive oil is one if the few things all my DC have enjoyed ( even the ones who said they didn't like fish) and is really inexpensive.

In a food processor, mix smoked salmon with same amount of cream cheese eg Philadelphia, and a splash of lemon juice. Makes a very tasty pate

Make your own sushi at the table with avocado, salmon, cucumber, pepper, cream cheese, brocoli, anything they might eat. You don't have to roll it, just squish some rice together with something on top
