Does anyone have any good green (unripe) fig recipes. We have a fig tree which produced a lot of figs that didn't ripen this year. We did a major cutting back job on it yesterday (it was taking over the garden) and I collected two mixing bowls full of unripe figs in the hope I could turn them into something edible... I'm trying this one, but does anyone have any other good ones?

And also, does anyone have any tips for dealing with the sap, which appears to be impossible to remove from the handle of the knife I used to prepare them yesterday?
