I'm a cook, but come Wednesday night, I'm a bung some veggie chicken in the oven, heat up some rice and edamame beans and smother it all in the yo sushi katsu sauce kind of woman.
There's nothing wrong with an omelette for tea.
My sister makes a mean sausage and bean stew that's easy enough to scale down (or freeze the dreaded leftovers).

We love a full English for tea sometimes, veggie sausages, hash browns, eggs, mushrooms, plum tomatoes.
How easy is easy though? Filled pasta and a ready made sauce is ready in 5 minutes, but I'd rather have a an egg on toast!
The other thing you could do is make enough mashed potatoes to do sausage and mash one night and then the remainder could top a lentil cottage pie for the next night.
