Easy after work vegetarian meals

In a bit of a rut. Work full time and it can be very stressful.

Looking for quick meals to serve 2. I’ve got loads of recipe books, but they mostly serve 4 and I don’t really like leftovers.

Halve the recipe 😊
Broccoli balls with spicy tomato sauce.
Nasi goreng with quorn pieces
Shepherds pie with quorn mince.
Veg chilli.
Roast vegetables with veg couscous.
Tomato veg casserole with vegetable suet dumplings.(slow cooker).
Baked Camembert with crusty bread
Loads of recipes.. don't take ages either. X

YOu can also freeze Dhal in portions so you just need to defrost it and put some rice on.
Bean chilli- tin of mixed beans, seasoning, chopped courgettes, peppers, some wedges, rice or nachos.

I mean, it doesn't get much easier than jacket spuds. And, if you love to cook, you could make kne of your serves 4 dishes and save the remainder for the jacket spuds the next day/day after.

I'm a cook, but come Wednesday night, I'm a bung some veggie chicken in the oven, heat up some rice and edamame beans and smother it all in the yo sushi katsu sauce kind of woman.

There's nothing wrong with an omelette for tea.

My sister makes a mean sausage and bean stew that's easy enough to scale down (or freeze the dreaded leftovers).

Ditto Spanish chickpeas, served with some sourdough.

We love a full English for tea sometimes, veggie sausages, hash browns, eggs, mushrooms, plum tomatoes.

How easy is easy though? Filled pasta and a ready made sauce is ready in 5 minutes, but I'd rather have a an egg on toast!

The other thing you could do is make enough mashed potatoes to do sausage and mash one night and then the remainder could top a lentil cottage pie for the next night.

My quick and lazy meals include big mushrooms with halloumi and salad. Add potato wedges if needed. Or a noodle and veg thing with coconut milk, spices and peanut butter. I also cook a curry or chilli on a Sunday for a couple of work night and freeze half for another week. Lidls do nice vegetarian pies which I have with veg for another quick win.

I don’t think I explained myself very well though, sorry.

I want recipes specifically for 2, rather than halving recipes that are designed for 4. I don’t want to eat leftovers or freeze half. And I don’t think things like cottage pie are quick and easy when I’m likely to not be starting to cook until 6.30.

I’m looking for links to specific recipes that serve 2.

Sainsbury's magazine website in general has some great recipes.

This is another quick favourite of ours and although it serves 4 I generally find that the sauce is really only enough for 2 people anyway so I cook all of it and then just one pack of halloumi https://www.bbcgoodfood.com/recipes/halloumi-fajitas

Also, something I find quite useful is an app called paprika which allows you to download internet recipes into a really simple, consistent format. It's basically my personally curated cookbook! There's also functionality for changing the quantities, so I don't have to think about halving the ingredients as I go along if the recipe is for 4 people, iyswim

I would get a Hello Fresh or Gousto box - if you sign up new you can usually get 50% off your first box and they will send all the ingredients and the recipe cards for meals which serve 2. You can then keep the recipes and just buy the ingredients and add them to your repertoire. They have lots of meals which are quick and easy.

Ah, ok your definition of quick is different to mine, because if I have a bowl of mashed potato, a lentil cottage pie base takes 15 minutes on the hob and then half an hour in the oven.

Is the Jamie Oliver book, meals in 15 minutes more the thing? I don't think I have it any more, so can't remember if they were all serves 4 recipes.

Mushrooms cook pretty quickly, whereas root veg, aubergines all take longer. Could you ask chat GP for some recipes for 2, veggie, that take less than 30 minutes to cook? I bet they'd have loads of ideas.

Something that take ten mins and is really tasty is halloumi burgers. Get some brioche burger buns, fry some sliced halloumi and have it in the buns with hummus or mayo, sliced tomatoes and lettuce. Serve with salad. It's delicious.
Also just saute a load of veg (courgettes, pepper, mushrooms, spinach) and create an omelette. Lovely with crusty bread.

Really quick pasta, I do this when I want something fresh and superfast:

Set a pan of salted water to boil.

In another pan: Slice up one medium zucchini into bitesize pieces and begin to fry in a bit of olive oil.

When they begin a light sizzle, add a crushed clove of garlic. Add a heaping teaspoon of smoked paprika. Add a tin of drained borlotti beans.

Set the pasta to cook.

Slice about 2- 3 handfuls of cherry tomatoes in half and add to pan.

Salt to taste, add pepper if you like it.

Don't cook long - this should taste fresh. So by the time the pasta is cooked, the veggies are done, too.

Dump the pasta into the veggies and mix. Serve with fresh basil and a grated cheese of your choice.

You can do this with filled pastas, if you prefer - generally sold in packs that serve 2. You can add in veggie meatballs or sausage if you're feeling like a bit of vegan UPF. :)

Bagged salad on the side if you have the energy.

I use a ramekin instead of a cup as the measure for 2 people and then add water and perhaps some more peanut butter (use crunchy) to make the right quantity. Any greens seem to work, and some versions also have diced sweet potato in.
It's quick and easy.

I don’t want to halve recipes because I don’t want to pillock around with half a butternut squash or half a tub of passata or whatever. Not sure why that’s so difficult to understand!

Thanks to those of you who are actually answering the question. Halloumi burgers a great idea.

I can cook, I like cooking etc. But sometimes I just want something nice and very quick.

Look at the Riverford website, you will find lots of great ideas there (as I said).

By the way, butternut squash don't come in standard sizes, and you can buy small cartons of passata.
