Hello, I was wondering if anyone would like to swap recipes for scratch cooking that have a short (5-6 excluding basics?) ingredients list? Currently cooking just for myself so don't want lots of leftovers and bonus points for simplicity!
I'll start with honey mustard pork, sweet potato and apple (for 2 but easy to scale):
2 sweet potatoes
2 apples
2 pork loin steaks
1 tbsp honey
1tbsp wholegrain mustard
1 tbsp olive oil + more to drizzle
Veg to serve
Heat oven to 180c fan
Cut 2 sweet potatoes into wedges and put on baking tray, drizzle with olive oil and cook for 15 mins
Mix 1 tbsp each of honey, wholegrain mustard and olive oil together and cut 2 apples (I use pink ladies) into wedges
Take the baking tray out of the oven and scatter the apple over the sweet potato. Add 2 pork loin steaks to tray and pour over honey/mustard/olive oil mixture
Return to oven for 15 mins and serve with veg of your choice (Normally broccoli here!)
