Scratch cooking with limited ingredients

Hello, I was wondering if anyone would like to swap recipes for scratch cooking that have a short (5-6 excluding basics?) ingredients list? Currently cooking just for myself so don't want lots of leftovers and bonus points for simplicity!

I'll start with honey mustard pork, sweet potato and apple (for 2 but easy to scale):

2 sweet potatoes
2 apples
2 pork loin steaks
1 tbsp honey
1tbsp wholegrain mustard
1 tbsp olive oil + more to drizzle
Veg to serve

Heat oven to 180c fan
Cut 2 sweet potatoes into wedges and put on baking tray, drizzle with olive oil and cook for 15 mins
Mix 1 tbsp each of honey, wholegrain mustard and olive oil together and cut 2 apples (I use pink ladies) into wedges
Take the baking tray out of the oven and scatter the apple over the sweet potato. Add 2 pork loin steaks to tray and pour over honey/mustard/olive oil mixture
Return to oven for 15 mins and serve with veg of your choice (Normally broccoli here!)

I normally buy meat from butchers and if I know it's going to be da meal for one or two I split the portions and freeze the rest ready to defrost for another week.

My latest easy meal was
1/2lb Diced beef
1/2 red onion
1/2 red pepper
1carrot
1 sweet potato
3 potatoes
4 leaves savoy cabbage

For gravy
3tsp gravy granules
1tbsp honey
pinch garlic granules
pinch mixed herbs
Squeeze of bbq sauce (I know, don't judge me)

All boiled together In a pot for maybe 30 mins
Mix gravy with boiling water and pour over meat/veg mix

Served with pasta for the sake of kids but could serve with rice or leave out potatoes and serve with mash!

Salmon with pesto breadcrumbs. I have a stash of frozen breadcrumbs in the freezer. Mix with pesto and press onto salmon before cooking. I usually have jacket potato and greens with this.

Oooh that sounds good, I do the same but sub the pesto for garlic philly (this does work for my mission to stop eating UPF!)

Mustard chicken

Mushrooms turn up into pan until they go a bit dark, add sliced red onion and chicken until chicken cooked. Add whole grain mustard and single cream and water until it look sauce like, bring to boil then simmer
I've used creme fraiche before too

chicken marengo -ish (this freezes beautifully so I make enough for 4 and freeze 3 portions)

4 chicken legs
100g kalamata olives pitted and cut in half
300g button mushrooms quartered
carton or jar of passata (the garlic and herb variety) if you can't get that then just add garlic and herbs to plain passata
Chicken stock cube

In frying pan, add olive oil and cook mushrooms until soft, add chicken legs and lightly brown both sides.
Add passata, stock cube and olives, season with salt and pepper, cover and simmer for 40 mins
Serve with pasta and salad or Mash and green veg
