Has anyone got a sure thing bread pudding recipe they are willing to share please? I have tried some found online (BBC Food and others) but the consistency was just too soft/mushy. I need something heavy and stodgy just like Granny used to make. 😃

A stodgy half way house between bread pudding and bread and butter pudding:

Stale bread with a bit of added cake, pastries or croissants (all stale) when available. Remember 1 tablespoon sugar is about one oz.

8oz stale bread, cut into small chunks.
2-4 oz dried fruit
2floz oil
2oz sugar
1 egg
¼ pint or a bit more of milk
Nutmeg

Stir it all together in a bit bowl and leave to soak for as long as possible (not more than 24 hours) stir occasionally.
Bake in 12 x 8½ tin (lined with baking parchment), gas mk 4 for 45 mins.

Do not use supermarket, bagged, sliced bread that does not go stale.

A dear old lady I once knew made the most divine, light bread pudding I have ever had. She said she whizzed the bread into crumbs. I've never tried it myself, but I should, cos I don't quite see how it would stay crumbly once you soak it. Maybe she had another secret!

I couldn't be doing with light I am afraid. Needs to be heavy, stodgy and sticking to my ribs!

I bloody love bread pudding. Love the stodgy-ness of it.
I add dried cranberries to mine sometimes as a bit of a "pimp"
