Bread and Butter Pudding Recipe without fruit needed!

As the title, I love bread and butter pudding, but my husband hates all fruit and fruit flavours - so raisins are out.

Suddenly that makes for a very boring bread and butter pudding, so wondered if anyone has a nice alternative?

Added difficulty is I don't like chocolate - so can't sneak in any chocolate to jazz it up lol

How about toasted pecans, a pinch of cinnamon and vanilla, and a drizzle of maple syrup? I don't have a recipe, but if you add these to your normal recipe, it could be delicious.

Could you not just put raisins in one half and not in the other? Or even just do the fruit & non-fruit version in separate smaller dishes, with some chocolate chips in his? I normally add some nutmeg too.

Spread the bread with marmalade perhaps? Or use a more interesting substitute for bread - croissants, brioche (I was going to suggest Hot Cross Buns, as I've used them before, but they obviously have fruit in them!)

Caramel or dulce de leche smeared on the concealed parts of the bread (so it doesnt burn)? and some chopped nuts would be lovely

I would do individual ones in small oven proof dishes/ramekins. It doesn't take any longer to prepare IME.

Your DH dislikes ALL fruit or just dried fruit like sultanas and raisins? A B&B pudding with no fruit sound very bland and unpleasant imo. You could put fruit in your ‘end’ of the pud and not in his? You could try Nutella, or peanut butter with/without some dark chocolate. If it’s just dried fruit you want to avoid then apricots and honey, add some chopped toasted almonds on the top for a bit crunch is lovely.

This is delicious, especially with brioche. You can do the fruit ones with lemon or passionfruit curd.

@FadedRed All fruit, in all forms, unfortunately. So even @ReviewingTheSituation marmalade is out.

Fruits even include tomatoes, cucumber, orange juice.

Yeah I think doing separate ones is best in that situation, and Nutella for him (I really don't like any chocolate lol) and fruit for me.

My Grandma used to add marmalade. Funnily enough, although I don't much like marmalade, I love it in B&B pudding.

Have also had a nice brioche version with grated marzipan.

He's got ARFID - really struggles with food bless him, and yet he took me out for an expensive course meal last anniversary, and ate every raw tomato, caper and piece of beetroot without complaint.

Coconut bread pudding recipe

Small loaf of bread
Unsalted butter
2 eggs
Coconut condensed milk
Full fat milk
Sugar
Dessicated coconut
Nutmeg
Toasted coconut for the top

These are the ingredients - you prepare and bake just as you would any B&B pudding :)

So, I do my bread and butter pudding with apricot jam and brioche, but as a PP suggested - you could definitely use Dulce du leche instead if the jam, then create caramel brioche sandwiches and carry on like that. For extra decadence you could use baileys in the custard mix and sprinkle with chocolate chips or caramelised nuts or something?
