What would you use instead of mirin?

I’ve googled it and my head is spinning 😵‍💫.

I’ve got Amontillado, Shaoxing or plain old Chinese Rice Vinegar to choose from.

recipe I am using

I would use shaoxing and sugar. So 1tbsp mirin = 1tbsp shaoxing + 1/4tsp sugar.
