Pesto rice salad

I want to make St Delia's pesto rice salad but cheat and use store-bought pesto. Which one should I use and more importantly, how much should I add, as the recipe assumes you'll be making your own from scratch?

Sacla is the best. No idea of quantity, I will not use her recipes ever again.

Why not Georgy?

I'm willing to bet that Georgy's aversion is due to Delia being vocally anti-Brexit. I just googled to see what other controversy Delia has whipped up, and apart from her criticising Vote Leave, Georgy would have to be very heavily invested in Norwich FC to swear off her recipes for good!

But s/he is right about Sacla! I think the quantities would be more or less the same, maybe slightly less if using store bought.

Just here to find out Georg's beef with Delia is

Loving Delia and her views on everything.

I would use fresh pesto - every do a very nice one in. Sainsburys. You might need two pots. Taste it and see if you need to add more.

Waitrose and M&S do lovely fresh green pestos. The Genovesse one in Waitrose is perfect.

(Also want to hear Georgy's views)

@LauderSyme You've lost your bet ! Nothing to do with politics or football, but her cooking skills - or lack thereof.
I made a disastrous meal that involved dried haricot beans in a casserole. I was dubious, but assumed she knew what she was doing. Wrong, we had to pick out uncooked beans. There was a complaint from someone on her website, & she insisted that it worked if you used a metal casserole - wrong!

I tried another meat recipe that required much longer to cook than she said.

Then the final straw was the fiasco with Waitrose & fish stock where it was so obvious she hadn't even tried the recipe. After that, she disappeared from view.

I find Sacla pesto tastes v salty these days, more than it used to. Bigger supermarkets sell pots of fresh pesto usually near the fresh pasta - I'd go with that!

Definitely fresh, not sacla. A whole tub will do fine, two even better. Love this recipe. (Love Delia too!)

Thanks everyone, use a pot of fresh pesto from M&S in the end. Bellissimo!
