My DNephew is coming to my DM’s house tomorrow (I’ll be visiting) with DB and we’d quite like to do cakes maybe cupcakes. He’s made a few things over lockdown from subscription baking packs.

DM has a red velvet cupcake mix but we were thinking of something less sugary. Maybe Queen cakes. Any ideas?

I’d just be doing Delia Smith’s all in one recipe. You can’t get any simpler and it’s foolproof. I wouldn’t buy a cake mix.

Here, basic buns from a budgeting book! 2ozs soft butter, 2ozs sugar, 4ozs self raising flour, 1 egg, half eggshell of milk, beat the lot together, if you need a little more milk to make it blend better then add some, bake at 170 fan until brown, not too brown, just risen and cooked looking.

Not that high in sugar or fat due to the larger quantity of flour used, most recipes you look at are equal butter/sugar/flour whereas this is double flour.

Can be doubled or trebled too depending on how many needed.

Use a basic sponge mixture

weigh 2 eggs and use same quantity of flour, sugar and butter. Mix butter and sugar together, then add eggs and flour pop in bun tin with paper cases and pop in medium oven for 17/20 minutes

decorate with icing and sweets, get jelly tots chocolate buttons, that type of sweet

this the the recipe I learnt too! Except we tend to use a baking spread rather than butter (don't need to get it out to soften), add a 1/2tsp baking powder, and 1tsp vanilla. I also do it as an all in one method and never had a problem.
