Does fruit and veg in baked goods retain any nutrients?

Or to put it another way can I justify eating copious amounts of banana bread and cheese and broccoli muffins?

I think that they probably do retain some of the nutrients and have a higher fibre content than cakes and muffins without fruit and veg (I am not an expert, though) - but it doesn't make them less fattening (sorry!).
