Homemade veggie sausage rolls

Hello

I saw one of those short social media videos of a woman making vegetable packed 'sausage' rolls for her kids and it looked delicious! Of course I can't find it again and am wondering if anyone has a recipe?

Don't really want it full of breadcrumbs, mushrooms or Quorn if I can help it. Rather full of actual veg.

Maybe carrots and squash?
Not sure what's best to use to stop them going soggy...
Does it need egg to bind it?
Puff or short rust?

New to this kind of cooking!

I recently used a pot of hummus as the binder in veggie 'sausage' rolls and they were fantastic (scarfed down by non veggies). It was one with a dollop of harissa on the top, which added a nice kick of flavour too.

I've used this faux pork pie filling in veggie sausage rolls. It's nice.

This one does contain mushrooms but it's a lovely recipe, I make the filling into nut roast too. You could probably sub mushrooms for a non watery alternative veg - small diced roast root veg maybe?

Love these too, I've used sweet potato which I always have in the fridge rather than butternut squash, worked really well.

These look great, thanks. I think I will try a combination of them.

Did think of using courgette but I think it will be too wet.

Will try carrot sweet potato lentil cooked and mushed with garlic, mustard, cumin, coriander maybe tom puree...sound ok?

So I made my 'sausage' rolls yesterday and they were delicious!

I boiled about 150g red lentils, 2 carrots 2 smallish sweet potatoes with a bit of boullion. Drained and mashed. Fried mushrooms and onion until quite brown for a bit if texture and extra flavour. Added garlic to onion and mustard and seasoned whole lot.
Egg washed and sesame seeded the rolls. I cut the puff lengthways in half which made two big rolls which I cut into 8.

Came out really well but far too much mixture for the one roll of puff I had! Could have double the amount of pastry. I froze the extra mixture.

Overall really happy with it!

I make the Felicity Cloake recipe above. My DC (4) hates mushrooms but will happily eat them!

I made some recently with puy lentils and veg. I can’t remember which recipe book now but will have a rummage.

Some of these recipes look great.
