Last minute special cake

Someone's coming round for dinner tonight abd id like the bake them a cake or something special to celebrate an achievement. The problem is, I can't start baking until 4... so I still have time or shall I just buy something?

Plenty of time (unless they're coming at 4.30...).

Victoria sandwich is our family favourite and I can have it in the oven in 15mins, bake for 25 then cool for as long as you have. Weigh 4 eggs, then get same weight of SR flour, caster sugar and butter. Stick butter and sugar in mixer for ages. Slowly add the eggs with a dash of vanilla extract. Fold in flour. Divide between 2 lined tins and bake for 25 mins at 165 fan (180 non). Cool on rack then sandwich with seedless raspberry jam or anything you fancy. Whipped cream and strawberries if you feel fancy.

Scones can also be on the table within 30 mins.
