If I bake muffins now, will they still be fresh and nice tomorrow?

I need to make something for the preschool cake sale and have the ingredients for some cranberry/orange muffins. I have time to make them now but wonder if they'll still be nice by tomorrow morning. Not sure if muffins are things that should be eaten ASAP.

Thoughts?

yes.

the only problem with cooking them ahead is that they tend to get eaten before the cake sale.

i quite like them the next day. they will be a little more solid but probably still yummy. i swear by nigella's raspberry and lemon recipe.

Hmmm - yes good points. PArticularly about any of them being left. Maybe I should resort to chocolate cake.

They will still be fine the next day. Another little cheat for future reference, is mix wet ingredients in one bowl and put in fridge. Mix dry ingredients in separate bowl. Then combine the two when you are ready to bake. I have done this a couple of times so we can have fresh muffins for breakfast. Yummy xx

Store them in a sealed tupperware to keep them moist.

Right - thanks for all the tips. I opted to make fairy cakes as my children are being beasts and I just needed to do something fast. However, will store the tips for future use.

The birds buggered off. Neither died. I felt like taking a shotgun to them and making them die after all of that.
