That will hold up to stacking & buttercream frosting/decoration?

I like Nigella's Victoria Sponge recipe, but not sure if it will hold up to layers of frosting?

Nigella has a birthday cake recipe especially for this. It’s a Madeira type. I’ll try to find

Nigella’s buttermilk birthday cake

Zwicky · 24/09/2023 20:07

That’s the one

The janespatisserie website has a good selection.

Victoria sponge is absolutely fine. I’m a professional cake maker and it is the basis for all the cakes I make (including multi tiered wedding cakes). I don’t like Madeira personally, it’s a bit too dense and heavy.

I've used standard Victoria sponge recipe for years, always fine. Main thing is to chill after crumb coat then chill again before covering , and dowel if you are stacking (all these techniques are on google/you tube)
If you want flavoured cake Peggy porchens recipes work . She is cake decorator

Another vote for Nigella's buttermilk birthday cake, came in here to suggest!

Thanks all! I might try the Victoria Sponge recipe this time.

I can't remember the recipe I had been using, but it was very heavy and the frosting always sorta seeped into it - making it not very nice

Okay so I tried the VS recipe and find the layers pretty thin? Using 2 20cm cake tins

Could either recipe work if I used just 1 tin? Would rather deeper cake layers

Double the recipe and cook few degrees cooler

The cookies and cereal Oreo cake on the bbc website is good if you fancy chocolate. It has coffee in but you can’t taste it at all. The layers stack brilliantly with the Oreo icing and it stores well in the fridge.

I'd like to add my support for Nigella's buttermilk birthday cake - just wanted to recommend it!

A friend who makes amazing cakes (made her own wedding cake) swears by Good Housekeeping Naked Cake recipe. Here's a link to her Instagram post www.instagram.com/p/COIsF6rDA1z/?igshid=MzRlODBiNWFlZA==
