Cost per portion

Of course with COL, prices are affecting total cost of recipes.

I like to track cost per portion of meals I make as I batch and bulk cook. A couple of years ago evening meals would average 80p-£1. Now they're averaging £1.20-£1.50. The exception being Dahl but I can't eat it every day.

But I was wondering, what would be the average cost per portion for other people's typical evening meals? And has anyone got some bargain batch cooks?

Typical meals:
Chicken Curry w/ cauliflower rice
Sausage lentil casserole w/cheesy mash
Dahl w/cauliflower rice
Sausage and mash w/broccoli
Chicken cacciatore w/carrot noodles

I make a huge batch of bolognaise sauce in my pressure cooker. 750g pack of mince does the 2 of us at least 4 different evening meals. Tonight we'll have spag bol. I'll scoop out a portion for tomorrow night, and as it'll be chilli I'll be adding some beans, so will keep the amount I save smaller than 2 full servings. The rest will go into 2, or maybe even 3, freezer bags and be stored for next week. Average cost per portion, considering I bulk it out with veg and use cheapish tinned tomatoes, is probably £1.

Re batch cooking, have you found the Batch Lady on You Tube? She's got a couple of cookbooks out too. Very sensible Scottish Borders lady with a good old fashioned approach to making the best of what you have. I think she's on Instagram too. And probably facebook. I recommend you take a peek at her recipes.
