What shall I make with these?

I have, to use up (today/tomorrow i think:

Punnet chestnut mushrooms
Bag of curly kale
yellow pepper
2 large courgettes
Sweet potato

Plus:
3 Red onion
Lemon and lime
Feta
Peas
Dried porcini
Usual larder.

What shall I make?

I was thinking
Mushroom risotto, (poss with kale)
Courgette, feta, mint and lemon pasta
Roast sweet potato, red onion and yellow pepper, with wilted kale.

Am I missing something awesome?

I'd make a veggie pie with a creamy sauce and pastry top. Crispy kale on the side.

Do you need it to do 2 meals? Because I'd buy a fresh cucumber and tomatoes and make a Greek salad with the feta for the next night.

I'm only catering for 2 so leftovers OK but I don't expect to squeeze everything into the one meal.

Kale salad.

Finely chop the kale. Then generously add olive oil and lemon juice and massage it (massaging is really important here). Then add chopped garlic and slivers of parmesan cheese. If you have any, also shaved almonds. More olive oil and lemon juice and some salt. Delicious.

I’d chop up and roast the sweet potato, pepper, courgettes and onions with some spices and then serve with feta.

Make a ratatouille, put it in a baking dish with the feta in the middle, add herbs and EVO from the larder and bake. Serve on baked sweet potato.

Freeze the peas.

Bin the kale.

If you haven't already used them, Hugh F-W has a great recipe for mushroom and kale lasagne which is lovely.

Not when I made it it wasn't, it's possibly the worst thing I've ever cooked. I'm a good cook, god knows what I did wrong.
