Many many years ago (prob late 90s) I used to make a lovely risotto with butternut squash and roasted hazelnuts. I could've sworn it was a Nigel Slater recipe, but have been through my old cookbooks and it's not there.
I know there are various recipes online for similar but this was such a nice version - rather than roasting the squash you cut it up into tiny cubes, and I think the hazelnuts were sprinkled on at the end. I can probably just make something up, but wondered if it rang bells with anyone on here who might have the recipe I'm thinking of?
