Does anyone have any good ‘chop & chuck’ recipes? Ones that you can prepare quickly and (largely) leave them to do their own thing. Just making a jambalaya for tea (recipe from a 2017 book, Family Feasts for a Fiver - before inflation rocketed).
100g chorizo, 1cm pieces
2 onions, diced (I use 1 large)
2 green peppers, diced
2 celery stalks, diced
300g turkey breast, cut into 1cm strips (I use turkey steaks)
1 tbsp dried oregano
2 tsp dried thyme
2 tsp sweet paprika
250g long grain rice
1 tin chopped tomatoes
300ml chicken stock
Stir fry chorizo, onions, peppers & celery for 5 minutes. Turn heat to max, add turkey & cook for 2 minutes. Sprinkle in oregano, thyme & paprika. Stir. Tip in rice, tomatoes & stock. Simmer with lid on for 15 minutes. Turn off heat for 5 minutes & sit. Fluff up & eat!
