Does anyone have any good ‘chop & chuck’ recipes? Ones that you can prepare quickly and (largely) leave them to do their own thing. Just making a jambalaya for tea (recipe from a 2017 book, Family Feasts for a Fiver - before inflation rocketed).

100g chorizo, 1cm pieces
2 onions, diced (I use 1 large)
2 green peppers, diced
2 celery stalks, diced
300g turkey breast, cut into 1cm strips (I use turkey steaks)
1 tbsp dried oregano
2 tsp dried thyme
2 tsp sweet paprika
250g long grain rice
1 tin chopped tomatoes
300ml chicken stock

Stir fry chorizo, onions, peppers & celery for 5 minutes. Turn heat to max, add turkey & cook for 2 minutes. Sprinkle in oregano, thyme & paprika. Stir. Tip in rice, tomatoes & stock. Simmer with lid on for 15 minutes. Turn off heat for 5 minutes & sit. Fluff up & eat!

That sounds yum!

My go to is similar:

Chop onions, carrots and potatoes. Throw into baking dish, drizzle with oil and salt and pepper. Stuck in the over for 15 mins. Add chicken thighs, drizzle over some more oil, grate a stock cube over the lot (for extra flavour), stick back in the oven for another 25/30 mins.
