Your best bubble and squeak recipe?

It was mentioned in a thread in chat and now I have a yen for it!

I'm not sure there should be a recipe as such, the whole point is that is uses up left over veg!
It works best with a good mash like base, potato or a combination of root veg, carrots and parsnips and something oniony, leeks or grated onion and I think traditionally cabbage. We always use sprouts at christmas. I like a combination of textures. If it doesn't seem wet enough gradually add an egg until it does. Season to taste. If it's too wet dust with flour. Fry until golden on both sides, avoid tipping too early allow a crust to form. We throw all sorts in b&s, herbs, horseradish, mustard, stilton, bread sauce (not all at the same time)!

I only had a snack last night as I slumped a bit but am doing vegetables and potatoes to go with supper tonight.

So bubble and squeak on for breakfast tomorrow.
