Tempura for lunch?

I am watching Masterchef Australia. They've just tasted some tempura and now I'm thinking of making tempura for lunch. But really, is tempura vegetables for lunch just a bit ridiculous and unhealthy!? Grin

I have aubergine and onions which I know will be great. Might try some Tenderstem broccoli that needs to be used up.

Pumpkin or kabocha squash is my favourite. I'm lazy though and I would never batter and fry anything at home. 😂

I have WFH since Covid and after the people, the thing I miss most about going to the office every day is the canteen. They used to do an excellent veg tempura every so often. So they obviously think it's fine!

I've got the water & some spare veg, can I join you ?
I'd far rather have that than the usual sarnie/salad/soup lunches that seem to be prevalent in the UK.
