Lemon cake

DS has requested a lemon cake for his birthday tomorrow so hoping someone has a suggestion for cake that’s more exciting than a lemon drizzle but fairly simple as I’ll need to make it after work tonight.

Victoria sponge with added lemon zest; split and fill with lemon curd and white buttercream, top with a white glacé icing with lemon juice added.
15 years ago you could have topped it with those jelly citrus segment shapes.
How old is DS? Can you get away with writing his name on the top and adding candles or will he expect more decoration?

They were my favourite when I was a kid! Why do they not sell them anymore?!

DS is nine. He’ll be happy with simple decoration as none of DC have ever particularly cared for fancy cakes.

You could do a drip cake - add lemon zest to your go-to Victoria sponge recipe and buttercream and fill with lemon curd. Cover in buttercream and then melt some white Choc with a drop of veg oil/coconut oil and use a spoon to drip down the sides (or pour on top and let it drip down itself) then top with his favourite sweets/chocs etc. I know some people think drip cakes have been overdone but I still love them

I think you could probably still get the jelly lemon segments on Amazon. I managed to find the boxes of lemon and orange segments a couple of years ago.

I bought some of those little lemon segments and orange too at a cake decorating shop last year. They are so delicious I think I've eaten more than I've put on cakes!

He probably wants lemon drizzle doesn't he?! It's the best cake. You can put lemon buttercream on top too if you want an extra bit to put hundreds and thousands on.

Lemon drizzle is an excellent cake but doesn’t seem right for a birthday cake to me.

I’m going to go for the Victoria sponge idea and sandwich together with buttercream and curd, and lemon glacé icing. I think he’ll like that.

I made my friend a lemon birthday cake for her 40th and I'm pretty sure it was this recipe. It had four layers and I did lots of lemon buttercream which I covered the cake in and piped striped rosettes on top. I also bought some mini lemon flavoured meringues from M&S and put them on top. It did look pretty spectacular if I do say so myself
