Cake recipe and quanitites for a 25cm X 35cm baking tray

I'm making a birthday cake for ds 3rd birthday. Needs to be quite big cos we have loads of kids and adults coming to party.
I am planning on using a large roasting tin that I have which is 25cm x 35cm and I am going to bake 2 cakes and sandwich together. (Then decorate as Toy Story)
Trouble is I cannot find any recipes or sites which tell me the appropriate quantities for a size of tin like that. (But I have found advice saying I shouldn't just double up my sponge recipe!)

That clever trick makes perfect sense. Will any cake recipe for an 8 inch tin scale up and cook properly. I read somewhere that I would have to use a madiera cake recipe otherwise it wouldn't cook properly in the centre. Do you know if that's true?

mars bakes her LDC in a big tin like that so it should be fine.

Think I'll give it a try and bake one tomorrow before I do 2 on Friday.
