I need to use up some frozen soffritto

I have 6 bags of it in the freezer.

Please inspire me with some decent, fairly quick and simple recipes so that I can use them up.

Not spag bog though please.

I often use instead of just onion in a recipe when it starts with “fry onion”. I especially like it in risotto. More flavoursome and feels like I have got extra veg in. Or in fritata - sweat soffrito, add peppers/spinach/bacon, pour over eggs, finish the top under the grill or flip in pan if you are brave (I am not!).

It works well as a base for that dry soup mix you get in packs , the one with the lentils / barley/ split peas. A bit of chicken if you like, topped up with stock, slowcooker. Very good for Autumn evenings.

@Loopy9 That recipe looks lovely! What size is the tin of green lentils? I’ve not used hello fresh, so don’t know if they use normal tins or their own special ones…. TIA

Any recipe that starts 'finely chop and fry and onion' you can use the soffrito instead.
