Making milk chocolate advice

Hi

I am looking to try and make my own milk chocolate and am feeling Overwhelmed at the number of options for cocoa / cacao powder - has anyone got any experience with this and any products they would recommend?

My very naive ambition is to make something that tastes similar to dairy milk without the ultra processed rubbish that they now put in it - I know this is totally unrealistic!

I did not know you could do this!
I just googled and several YouTube videos came up about making dairy milk at home, but too late for me to start watching now or I’ll be scrolling all night. I’m assuming you’d need cocoa butter too? I will definitely have a watch of some videos tomorrow to see if it’s worth the faff.

A lot if the extra ingredients are there to stop it melting and to give it a longer shelf life

A friend of mine made some delicious chocolate as do some health food stores but it's very soft, has to be kept in the fridge and doesn't last long. Not that chocolate ever does
