Why is my soup so bitter?

I made what I thought was going to be a lovely soup yesterday, for lunches this week. It contained the following, which I simmered until the veg was cooked and then cooled it off and blended it smooth:

Celeriac, carrot, apple, veg stock (Knorr stock pot), fennel seeds, hendo's, ground coriander, celery salt.

I've just had some and it has a bitter taste to it. I didn't peel the carrot, surely that can't have turned the whole thing bitter? What could I can add to the rest to counteract it??

It’s the celeriac.

It’s a pungent veg so needs to soak in cold water for a couple of hours and the arse boiled out of it to lighten the taste.
