Bannofee pie

Hi there, I recently made a bannofee pie and although the carnation milk was boiled for 3 hours left to cool and look fine at the time,after adding bananas and cream the toffee was runny, so it ended up like a land slide. What went wrong?

I used to boil the can but now just buy a can of caramel. Try that?

The longer you boil it the thicker it gets, I never find the tinned stuff thick enough. But if you stir it a lot after it thickens I find it gets thinner and doesn't regain the same firmness.

Was it warm? I find it thickens when it’s cooler/refrigerated. Also I now use the ready boiled caramel with no issues, haven’t boiled a tin for many years!

Honestly as @BeauSignoles says, buy the ready made caramel rather than condensed milk. It's slightly more than a can than condensed milk, but no boiling for hours. I can knock together a bannoffee pie in about 15 minutes using ready made caramel

Carnation is condensed milk (though they do make evaporated milk as well..)

@ChristmasKraken I only know Carnation as the thin milk (I'm old and family used it a lot in hot drinks) didn't realise they did condensed milk too! I'm wondering though if the OP did use the thinner Carnation🤔

@ChristmasKraken yes it's evaporated milk..we just always called it Carnation, do you know of any other brands that do evaporated milk? I've never even seen own brands🤷🏻‍♀️

OP not sure from your post whether you added cream to your boiled condensed milk? You usually just layer the bananas ,toffee, then add a layer of whipped cream .

Years ago, Carnation was evaporated milk and the thick condensed milk was Fussells but that became Carnation years ago
