I’ve impulse purchased a Kg of goats cheese (it was a serious bargain). Now what the hell do I do with it?

what kind?
mild cream cheese kind of stuff or hard cheese?

cream cheese: bake figs and tops with cheese.
blend with frozen fruit & sugar to make a sort of instant ice cream

If its the firm stuff, you can generally use it any place you would use cheddar or similar. Macaroni cheese, cauliflower cheese, sandwiches, cheese on toast topped with a sprinkling of paprika, grated on top of lasagne etc. It's really versatile.

I had a pizza with goats cheese on it when we were on holiday last year. It was one of the best pizzas I have ever had in my life.

I had toast with goats cheese and balsamic glaze in a restaurant. You need to grill the cheese too. It was divine.

Freeze in suitable portion sizes. The texture will change, but it's fine for cooking

In a salad with beetroot, rocket and walnuts

Salad with courgette ribbons, defrosted peas, mint and lemon

I’ve been eating goats cheese and orange salads this week - so refreshing in the heat. Made a maple orange dressing to go with.

Big fan of it on pizzas with red onion chutney, walnuts and rocket.

Posh cheese on toast. Get walnut bread or make it as can never find anymore, pop cheese on and drizzle honey over the top. Serve with rocket.and balsamic
Or
Blanch spinach, toast pine nuts, chop goats cheese into cubes and mix with olive oil.
