Urgent dessert recipe needed!

For some reason I said I’d make dessert for a friends get together this weekend 😭. I don’t bake 😂. Any super quick easy suggestions?? Not cheesecake related!

A really old-fashioned (only we call it retro these days) recipe that's quick and easy, but you need to make it either the day before or a few hours before.

Buy a packet of chocolate chip cookies (I used to like the ones with nuts in). Whip a load of cream. Sandwich the cookies together with a thick layer of whipped cream and cover the log shape with more whipped cream. Grate or crumble chocolate on top. Refrigerate several hours or overnight. The cookies become cake like as they absorb the moisture from the cream. When you slice it, slice it on the diagonal and it comes out in vertical stripes.

A pp pointed out that dipping the cookies in sherry or coffee briefly before sandwiching with whipped cream improves it greatly,

That biscuit log takes me back. I have a dim memory of my Mum making something like that with gingersnaps.

Nigella has a great one in her Nigella Express book.

Buy some chocolate crepes and fold into triangles and layer in a baking dish. Drizzle with Hazelnut liqueur and microwave for a couple of minutes until warm. Sprinkle with chopped hazelnuts. Serve with whipped cream into which you have added a little of the liqueur. One crepe per person is a good serving size.

Takes 10 mins tops from start to finish, looks beautiful and tastes fabulous!

@bobbinsnbows - whipping cream I think. And as @Gasp0deTheW0nderD0g suggests you can make it with ginger snaps as well, though it might need to be left overnight for them to soften nicely. I haven't made this for probably forty years!

So the sandwiched biscuit thing done with ginger snaps is soak the ginger snaps in Cointreau, then sandwich together with whipped cream (so it holds, double cream just needs whipping)
Then another layer over the top so the biscuits are entirely covered possibly some grated Choc on top or crumbled ginger snaps. Can be vv alcoholic, loved making this as a teenager Grin

Trifle! Either buy the components and make it as an assembly job, or look for Nigella’s chocolate cherry trifle. No baking required!
