How do you make your bubble & squeak?

I need to make mine more crispy, how do you make yours?

Fluff up the top with a fork, dot with butter and either put under a hot grill (keeping a very close eye on it!) or in the oven at 200° for 30 minutes or so.

Mix mashed potato and shredded cooked cabbage (often with fried onion too) Make patties of them and dip in cornflour. fry in a mix of hot veg oil with a slice of butter.

the cornflour makes them crispy.

Serve with grilled bacon and half a bottle of Worcester sauce.
