Brioche in my Panasonic, what am I doing wrong?

I have tried twice now to make brioche bread in my Panasonic bread maker (2540) and twice now the mixture hasn't mixed properly with large pockets of flour in the corners and at the bottom. I followed the recipe precisely, used fridge cold butter, what am I doing wrong?

I think it's underdone too, quite stodgy, no colour on top and has sunk a bit.

It's a shame because I know it'll taste so lovely and so much more moist than shop bought (I've been able to nibble some!) wondering if I can simply mix it myself a little first to ensure the flour and water is mixed, but I'm a stickler for rules and it tells you to put it in in that order!

I'd give mixing it before putting it into the pan a go, then I'd bake it in the oven when the bread maker had done the kneading and proving.

I’ve only made brioche out of the bread maker. It’s such a long process and such a wet dough I don’t know how well the bread maker would cope. Having said that my bread maker is from the middle aisle of Lidl!
I don’t think it’s hard to make normally - well if I can make it anyone can.
I really want a slice of warm brioche now with salted French butter and jam.

I mix my brioche in bread maker but bake it in loaf pan in the oven. My recipe calls for melted butter.
What recipe do you use?

I’ve done this once and used the bread maker like a mixer. I mixed the basic dough first, then mixed in eggs and then butter (using the pizza dough setting) which took a while (did it bit by bit) then I took it out of the machine and proofed it, then shaped, reproofed and baked.

you could mix in bowl first, then use the machine to knead, adding in the
butter in batches?

@FrenchBoule interesting as my recipe required fridge cold butter! It's the one in the Panasonic instruction book. I haven't braved anything that isn't all done in the bread maker yet.

OP, I’d try again with the recipe you have but

melt the butter
skip powdered milk
substitute water for milk

put liquid ingredients first,then add sifted and mixed dry ingredients.

@thdskdrggs one more thing

make sure your milk is lukewarm or room temperature and so is the butter- you don’t want milk solidifying when pour into cold milk, also don’t pour hot melted butter onto eggs.

I have a Panasonic - it’s a different model than yours, but I think there’s quite a lot of similarities between them so hope the below helps…

I’ve attached the instructions from mine, and a close-up of the recipe. Be careful with the eggs & water - they need to be weighed together so it’s a total weight of 280g. I sometimes bung the eggs into the bread pan and then realise I forgot to weigh them.

The bread maker beeps after 55 mins and then I add the next lot of butter. Works really well - it makes amazing French toast if you let it go slightly stale first.

@Sammysquiz oh interesting, I think I completely ignored that and did 280ml of water plus eggs 🙈. Going to try that Frenchboule's recommendations (separately obviously!) got my eye on the maple and pecan loaf first though...

I have made the brioche recipe in the Panasonic exactly as the recipe says. I have to say it was amazing, and I had to stop making it because I ate so much of it with butter and jam!
