What to do with pork shanks?

I have 2 pork shanks, each bit over a kilo .

Any ideas? Everything I've looked at seems to suggest a shank per person - I know they have a big bone, but they're a fricking kilo each!

I'd really love a recipe that would work for 2 x 1.2kg pork shanks, ideally that would serve 3-4 people.

Pulled pork.

Slow roast them with garlic, the skin on them makes the best crackling.
