I love avocado but waste loads. Does lemon juice actually work? Ideally I would like to chop a few avocados up on a Sunday and get Monday and Tuesday out of them. At the moment I take them to work with me and sit there at my desk with a knife chopping it up to put in my salad/on toast and make a right mess!

Will not work. You can get more than a day out of an avo but you need to leave remainder intact in skin and on stone airtight in fridge. So, cut in half, chop the half that comes away not on seed, put the other half as is airtight in fridge for next day.

Also not sure how you can make a mess chopping an avo. If in pieces for salad, you chop in in the skin and remove the cubes cleanly, just like you would with mango flesh. If out I use a kiwi knife/spoon as small, plastic and you just swap ends for chopping versus scooping out the cubes. If having on toast, surely you just scoop out with spoon and smash in small bowl then mix in whatever else if you don’t want plain (feta/a dukka/chilli etc) before transferring to toast?

Another one wondering how you're making a mess with an avocado - are you trying to peel it while still whole?

Best way is as @HoppingPavlova describes - cut in half with the skin still on, round the pit - then twist in either direction and you'll end up with two halves of the avocado, each still in the skin. Wrap up the side that still has the stone in it and it will last till the next day (you can sprinkle some lemon juice on the cut side as well to keep it green, if it goes brown it's still fine to eat next day, just a bit oxidized).

You could make a guacamole type mix and put into a really airtight container. I made some up on Sunday and used it again on Monday and it was fine.

Handy hint if you don’t already do so with guac, if storing leftovers keep the seed and store it with the seed in and just remove when get out of the fridge. It stops the colour turning. No idea how or why but it works.
