Clafouti? Rhubarb goes a funny colour in it, but it does taste good.

I second Rhubarb ice-cream - Delia has a really yummy rhubarb crumble one.

Roast it with brown sugar: cut stalks into large chunks, 20 mins with foil on then 20 mins without and serve with ice cream or custard or creme fraiche with shortbread biscuits and whipped cream...even stir into icecream and make rhubarb ice cream.

Stew rhubarb, and sweeten to taste.

Serve warm with full fat greek yoghurt. Simple but absolutely delicious.

We do one we call rhubard idiot - that's fool with bits of meringue in, like Eton Mess. Also rhubarb bread pudding - 3 cups stale bread cubes, 2 lbs diced rhubarb, tossed in 4 oz melted butter then 1 cup sugar. Put in shallow baking dish and bake mk 6 45 mins. Cup = half pint measure. The bread goes all caramelly and gorgeous.

Also stew it, drain it into jug, use fruit in pie/ fool and add gelatin and sugar to make rhubarb jelly with juice (vvvv nice)

Rhubarb meringue pie is good! I think the recipe is in one of the Nigella books - can dig it out if it would of interest.
