Slowcooker recipes that are a bit special

Dd1 and her partner are coming over to look at a wedding venue tomorrow and have asked to stay for dinner. Great no problem. However, as we will be out looking at this venue I ideally want something I can throw in the slowcooker and then serve without having to make a lot of extras.

My usual go to is Morroccan chicken with chickpeas and apricots but we had that last time they were here.

I dont want to do something like a gammon/roast as then I still got to sort sides. Soup is out as dd1 doesn't much care for soup.

Additionally dd2 who lives at home is a vegetarian so I need something that can be "vegetarianised"

I dont want to do chilli or Spag bol. Curry has been suggested and it is a possible but not one met with great enthusiasm..

So mumsnet any ideas?

Oh forgot to say nothing mushroom based as dd3 who is home from uni doesn't like them (her 1 thing)

Chicken with butter beans and lemon. Chicken legs, few veg, can of butter beans in chicken stock, herbs, with a quartered lemon or two.

Chinese style Beef and broccoli Not veggie obviously but I usually serve with some quick stir fried veg and noodles which would be vegetarian, can add some prawn crackers and veggie spring rolls.

I second the suggestion of brisket for tacos too, one of my favourite meals.

Sorry I couldn't be more helpful on the veggie front, we're shamefully a very meaty household 🙈.

I made this the last time my parents came to visit, I added stock as they don't seem to in the recipe and it came out brilliantly, I served with couscous and home made flatbreads.

Love a good slow cooker thread!

Top short notice for tomorrow but if you can get hold of the "simply cook " boxes the chicken makhani is one of our favourite slow cooker meals.

Ignore all instructions about marinading the chicken and baking it In the oven just sling the spice pots chicken and tinned tomatoes in the slow cooker and let it do it's thing. Add cream near the end. Chicken thighs work best!

Ohh, that looks nice. The slow cooked beef cheeks recipe on that site is amazing too. Highly recommend. I’ve found beef cheeks in Morrisons (though I think it’s more often there as we head into autumn), Waitrose butchers counter, or our butchers can get it with a couple of days notice.
