Raw chicken bones and skin

I have some raw chicken thigh bones and skin left over. If I want to make stock do I have to roast them first? Should I put the skin in too or will it make it too fatty

You don't have to roast the bones but it improves colour and flavour. But that's to be weighed up against energy use these days. It will still be good if you don't.

Yes put the skin in, it’s all good collagen and fat. Skim the fat off afterwards if it's too fatty for you.
