My DH has recently become a vegetarian. I am fully happy to eat less meat and have more vegetarian meals. Does anyone have any yummy meals that does not contain quorn etc. I've been doing spaghetti bol, fajitas all with meat substitutes but I'm getting fed up now! Love most food from around the world! Thank you.

I make my bol with red split lentils in place of mince so no Quorn.

There is a lovely recipe for stew and dumplings I lived on over winter, I will see if I can find it.

Here it is. Although I subbed Quinoa for orzo for protein, and the first time I made it I found the parsnips overpowering so left them out on subsequent makes. I batch cooked and froze it and tended to stick the dumplings in the air fryer for a few mins to crisp a little.

The Guardian food column The New Vegan is fantastic. Meera Sodha is the main writer for it, but other brilliant cook book authors step in sometimes. I know you only asked for vegetarian, but as a meat eater I think most of these recipes are brilliant. I love these two pasta recipes especially.

Spanakopita is super easy, I use the Jamie Oliver recipe.
Dahl is great, there is a man on tik tok called what in the chef who has done a dahl series.
The vegan Richa blog is great too for ideas with veggies and pulses

Arrabiata pasta to which we usually add aubergines (we have about 10 versions of this, some with and some without meat). Does need cheese to up the protein.

Vegetarian tarts using pre-made puff pastry. Goats cheese and caramelised onion or tomato and pesto (neither of which have been made by me recently - must get on that).

Chickpea and pepper curry with a tomato base or a Thai type red curry with a ny combo of veg but we like butternut and mange tout or cauliflower and aubergine.

Roasted vegetables on some sort of rice/grains pilaf - I've been loving honey and cumin roasted carrots with a lemon/mustard/honey dressing and a pilaf made with rice and lentils, topped with feta. DH and DS like roasted cauliflower.

Aubergine, mushroom and goats cheese burgers - drizzle with a little honey and some sprigs of fresh thyme to transform them!

I really like this 10 ingredient bolognaise. It makes enough for us to have bolognaise one night, then i use it to make a lasagne another night. I also add a tin of green lentils to bulk it out a bit and add a bit more texture. I don't bother with the wine, and it still is lovely.
