So many recipes claim to be quick, but they’re really not!
What are your best, quickest and most delicious two/three ingredient recipes…
My first two…
Mix feta and soft cream cheese for a yummy dip
And slightly less original…
Tomato and mozzarella ‘salad’

Mushrooms, garlic paste and cream cheese in a pan for quick creamy mushrooms. Lovely on sour dough.

Fried onion and bacon on spaghetti. "posh it up" with white wine and cream if you like but I spent my teen years eating it with just the onion, bacon and the olive oil for frying!

"No cook" pasta sauce which I've posted before: cook penne in salted boiling water. Just before it's ready, add a bag of spinach to wilt then drain, reserving a bit of the cooking water. Then add a tub of ricotta, grated lemon zest, a bit of garlic oil, some parmesan, season with salt and lots of black pepper. Stir with some of the water if needed to loosen up. Serve (with squeeze of lemon, parmesan and more pepper/salt)

My quickest (in term of prep time) easiest meal for lunch is roasted baby tomatoes that I put in the air fryer with some oil and some garlic cloves and cook for 20 minutes then eat with couscous and feta. If I want to take an extra minute, 1 add a small onion in chunks.

this one is a bit more ingredients and effort but still super quick - heat up large frying pan to heat of the sun. While that's happening, grab tender stem broccoli, leeks, spring onions - and just roughly chop into large slices. Rub olive oil and salt over them then cook in the hot pain quickly so they start to be a bit charred. Remove. Turn heat down. Slice halloumi and sprinkle with preferred spice/herb - I like cumin and smoked paprika. Add bit of oil to the pan and fry. When you turn the halloumi over, add some chopped garlic, a generous squeeze of lemon and drizzle of honey and stir around so it caramelises and turns into a sauce. serve in pitas/wraps/flatbreads with the veg.

Carbonara. Eggs, bacon and parmesan. Nothing else (except pasta cooking water to 'saucify').

Pasta with courgette, bacon and Boursin. Fry bacon and courgettes, stir in Boursin until melted. Stir through pasta

A gorgeous salsa for grilled salmon. Mix together diced fresh tomatoes and lots of fresh mint, plus some olive oil and vinegar (and a little fresh chilli or chilli flakes if you like). Seve room temp with warm grilled salmon.

Mushrooms on toast. Sliced mushrooms, fried with garlic and cream.

Lots of egg recipes. An omelette (obvious but I never think of them). Or microwave a pack of spinach, stick on hot buttered toast with poached eggs on top.

@pantalo you’ve just reminded me, I used to make fusilli pasta with grated courgettes and garlic fried in olive oil…it was for my toddler but pretty good.

Put nduja in a dry pan, once it's released its oil add some cherry tomatoes and sliced red peppers. Serve over spaghetti.

I make a Spanish omelette, its just 3 ingredients. It is not quick though as the onion needs to be cooked and then the potato for 20 minutes and then the mixture soaks for 20 minutes and then cooks for 20-30 minutes

it is easy though, cheap as chips and very tasty

Roasted butternut squash with halloumi on couscous, jf you want to make it posh add olive oil, sesame oil, honey and dried chillis before roasting!

Crustless mini quiches: eggs, beaten, plus a generous splash of milk (or cream or any similar substance, can also skip this if needed), plus generous amount of grated cheese. Fill silicone muffin cases and bake for about 10 mins.
These are also a perfect way to use up any odds and ends - add chopped veg, meat, bread, herbs, spices, anything. Serve with salad bits for extra health benefits.

Bruschetta (4 ingredients though!) - bread, garlic, tomatoes, basil

Marmite spaghetti - melt marmite in butter and mix with cooked spaghetti and a splash of pasta cooking water

Peanut butter and jam on toast/bagel

Egg avocado toast

This is a bit of a cheat as it uses a packet, but a perfect quick dinner for two people

Slice chorizo and cook in a hot pan until it oozes oil
crack in two eggs to the same pan
microwave a pack of Mexican/spicy rice
stick your chorizo and fried eggs on the rice
(I tend to add a sliced avocado on the side, but that’s four)

Broccoli pasta.

While the pasta is cooking, steam some broccoli. When it is tender, drain it and attack it with a sharp knife to make it into small florets.

Fry a pack of pancetta cubes, and when done, add some Chili flakes and crushed garlic, and briefly fry before tossing in the broccoli, and mixing it all together.

When the pasta is cooked, drain, and toss that in with the rest.

You can serve it with a bit of grated Parmesan or pecorino.

Okay, it’s technically 6 ingredients, but it’s mad easy, and you have a delicious and nutritious meal in the time it takes to boil a pot of pasta.

Papas con Chorizo

Peel and chop some potatoes into bite sized chunks, and put on to boil. Keep an eye, as you want them to be reasonably firm.

Cut a chorizo into thick coins, and fry it off, then spoon it out of the pan.

Fry a diced onion in the chorizo oil, then chuck everything in together, for a final fry, making sure the potatoes crisp up a bit at the edges.

I usually also add some fresh oregano, and some smoked paprika, especially if the chorizo is a bit mild.

I think the original recipe I had uses coriander rather than oregano.

Again, with the herbs and spices, it’s 5, but they are all things easily to hand in my kitchen.

I admit I have not read the whole thread, so apologies for repetition.

Boursin, mushrooms/courgette/pancetta (admittedly, I often use all of them, but any one is grand), pasta (or toast)

Sweet chilli philidelphia, prawns, pasta

Spinach, pinenuts, parmesan, pasta

Red pesto, chorizo, pasta

Green pesto, courgette, pasta

Omelette- bacon and mushroom, pepper and parmesan, spinach and mushroom. So many options!

Soup- pea (stock, onion, peas), carrot and lentil (stock, onion, carrot, lentils), potato and leek (stock, potato, leek), yellow pepper and sweetcorn, loads of options again!

Baked potato- boursin. Cheese and beans. Sweet chilli philidelphia and prawn. Loads of stuff there too.

Sausage pasta- cut sausages into chunks and brown in olive oil, add garlic then a tin of tomatoes. Add herbs etc as desired. Cook the pasta at the same time, all ready in about 15 minutes.

These are all so great. I don’t eat pork so maybe smoked salmon could substitute for bacon. @GentlemenPreferBlondes loving the easy quiches, will definitely try those! @BLT24 marmite pasta is absolutely nuts! I love marmite though. We have toast, butter, marmite and tomato slices on top….so good
