Can any one link me or kindly give me yours . Also do you blend til smooth or leave chunky?

I like the Jamie Oliver Classic Minestrone, which is chunky, I use beans or pasta not both.
His creamy tomato soup is also nice, I use half the recommended onion and double the celery, blends smooth.

I love a leek and potato, but mine's not veggie (can be adapted, obviously). Three potatoes, four leeks, 1 litre of chicken stock. Fry leeks in butter until softened and bright green but not catching; add the potatoes (cubed) and stir through the butter and leeks, add the hot stock, heat to boiling and simmer for about 20 mins until the potatoes easily crush with a fork, then take off the heat and whizz till smooth with a stick blender. Add salt and pepper at the end (check first - the salt level depends on your choice of stock).

Absolutely basic but lovely every time.

I tend to prefer smooth soups and really enjoy Cookie and Kate’s recipes. Some of my favourites are:
Creamy roasted cauliflower soup - lovely, real richness and creaminess from the cauliflower
Broccoli and cheddar soup - another delicious classic
Curried cauliflower soup - richer than the others due to the coconut milk, so so tasty and full of flavours
Green soup - this feels so good, nourishing and healthy to eat
Spicy black bean soup - the only soup on the list which isn’t entirely blended, and I think the additional texture gives something extra.

Tomato and sweet potato. You need a 50:50 ratio and it’s perfect! We have it blended smooth.

I use diced onion, carrot, celery and potato. Sweat with butter and a little salt. Stir in some flour and tbsp of tom purée. A litre of stock. Simmer 30 mins or so. Add frozen peas and dried macaroni and cook another 15 mins. Season. We eat it chunky.

I’m a chuck-er in-er, but made a delicious soup last week which was roughly:

Two sticks of celery chopped
two red peppers peeled and chopped
three medium sweet potatoes peeled and chopped
tin of coconut milk
veg stock cube
water

fry off the veg in some olive oil, add whatever seasoning you like (I whacked in a load of smoked paprika) then add your coconut milk and stock cube. Fill the pot with boiling water and simmer for about 30 mins. Blend til smooth.

I use any left over roast carrots and roast potatoes - heat through in chicken stock and blend until smooth.
