More often than not I cook only for myself. Occasionally DC and I eat the same/slightly tweaked meal and sometimes I cook for DP too but often it's just me. I sometimes make extra and freeze portions but not essential, my freezer is pretty well stocked!
What would/do you make for tea if it's just you?
I don't mind the odd omlette or JP but do prefer a proper meal. Love vegetables and spice, watching my weight but can alter ideas accordingly!
My own favourites:
Prawn curry
Mexican style eggs
Steak and roast broccoli
Chicken and veg traybake (Cajun usually- leftovers in a wrap the day after).

I also tend to make 2 portions and freeze ot fridge. Especially as mackerel, salmon, chicken breast etc come in packs of 2.

For myself I might make a pasta dish or heat up some soup and add veg or spice.

Are you looking for low effort or treat?

When it’s just me I make foods that my husband doesn’t like. Mostly aubergine based.
Spicy miso braised aubergine - so easy to make, feels light in the summer but warming in the winter
Aubergine with pickled cucumber and coconut rice - vibrant mix of flavours and textures
Black pepper tofu - fiery, rich and so tasty

I make a lot of food and divide it in two for the freezer.
Shepherds pie
lasagna
Chicken and veg pies etc
Risotto
Chicken Kiev
Chilli
Pasta bake -chicken/tuna/veg

And I make a lot of stuff that is for dinner and leftovers for lunch
Fajitas
Frittata
Stir fry - with or without noodles
Egg fried rice

And I make it all plenty spicy.

I hardly ever get to cook for just me. But if Dh took the kids somewhere for a week, this is more or less what I would eat I think:

Lamb chops, new potatoes, boiled peas and carrots - for a bit of a nostalgic, "boring but delicious" meal.
Lamb or oxtail stew/casserole - no one around here really likes stew except me.
Pasta with a bacon, mushroom, onion and cream sauce for a night when I want easy, quick and satisfying.
Something with aubergine (and thank you @PinkTonic that looks amazing - I'm totally going to try it).
Gyoza (the ones you buy frozen) with a noodle salad and maybe a miso soup.
Roasted vegetables, feta cheese and couscous.

If it's hot like currently, I'd probably cancel the stew in favour of a Asian-style salad with steak and lots of mint or, if I could be assed with the fiddly bit, a Vietnamese crystal roll, also with lots of mint (DH and DS don't like mint. I think they are heathens).

Usually an expensive treat, e.g. lobster, steak etc.
But I do hide the evidence !
Or the other extreme, carbonara as DH can't eat eggs.

Thank you all, some excellent ideas here! Not really treats but don't mind an effort either @Whataretheodds because it's so frequent I'd be the size of a house if I had treat food every time it's just me.
@Isthiscorrect I think I might have to make more use of my freezer- I portion up a lot of DC food and freeze but haven't really got into the swing of it for myself, bar the odd portion of chilli/bol.
@PinkTonic the spaghetti sounds delicious and I'm keen to try masala omlette. I'm not crazy about salmon or aubergine but I'm sure I could make something else work!

this Poster does recipes for one and mostly one pot recipes. I do find her portions slightly large though. e.g her hash brown topped cottage pie for example, I make it with 2 hash browns rather than 3 & I find half the amount of Quorn mince is big enough for me compared to her 100g minced beef, but her recipes are tasty, quick and filling.

I tend to cook Mon, Wed, Sat and make enough for 2 portions so can have for dinner the next night. Takeaway on Fridays. Typical meals are:

Spaghetti Bolognese
Salmon prawn asparagus pea harissa orzo
Chicken sausage toad in the hole with beans
Prawn chorizo paella
Roast chicken, roast potatoes and veg
Steak, sweet potato chips and veg

I don't think the pasta is the biggest calorific thing. Has butter, peanut butter and the crispy chilli oil.

It will be my first off day meal. I need to do 4 weeks first to get it shifting. On the crispy chilli oil, it’s bloody lovely in a cheese toastie, crispy bits obvs, not the oil. (Cheese toasties in the air fryer are partly why I’m on the fast 800).

Yes I can understand that. Good luck with it. I'm cutting down. Lost a few pounds and am toning.
