I have some soya flour, I want to make bread (I have a bread maker) I have looked on line but the recipes seem to be American and include things like guar gum.

DO any of you have a simple recipe?

Gluten free flours rarely work well in isolation. A blend is better.

That being said, soy is a natural emulsifier which holds flours together as there is no glue from the gluten. I would suggest buying a commercial gf flour blend as feeding a bit of soy into it with each recipe you do.

I tend to make a soda bread as yeast doesn’t give much of a rise but it has it’s fans. Also, once you have made your dough, allow it to set 30-60 minutes to hydrate. You can add more liquid if necessary. Bake at a bit lower for a bit longer. Allow to cool completely before slicing.
