So suddenly there will be 9 people for lunch tomorrow. Not a problem but I'd decided on rustic Italianish - lovely antipasti and bolognese. Ds and his gf now coming and I know she's not overkeen on bolognese so would love a bright idea while my Tesco order is still open! Only other thing she doesn't eat is mushrooms. Thanks!

Pasta Primavera...you could use asparagus tips, peas, broccoli florets and Romanesquo cauliflower (the one with those pointy spirals!)
Or
Sicilian pasta with a rustic tomato sauce and slices of fried aubergine.

Great ideas, thank you! Lots to add to my repertoire. I'm going for spinach and ricotta just in case some vegetarians turn up - dd has a habit of doing that!

Halve good quality cherry tomatoes (on the vine ones from sainsburys etc)

Roast in a tin with garlic, olive oil, and herbs, salt, and a little chilli for about 20 mins. I use 'spicy italian" seasoning which is perfect.

After the tomatoes have been roasting for 20 mins Boil linguine pasta in plenty of salty water. As you set the pasta off take the roasting tomatoes out and mash it all up a bit and put it back in the oven.

Once the pasta is boiled stir it into the roasted tomato pan, scraping any bits off the side of the tin and add a little olive oil, salt and fresh basil as needed.

Put into bowls and add parmesan and fried bacon bits as preferred.

Simple, rustic and absolutely delicious.
