It's called Afghan salad, or salata.
I did half a cucumber, half a red onion, half a small green pepper (this isn't in the recipe but I had it in the fridge) all diced pretty small. Then about 12 cherry tomatoes quartered and 3 large grated carrots. Then a large handful of fresh mint and another of fresh coriander, finely chopped. Then the juice of a lemon. Tablespoon and a half of olive oil and salt and black pepper. It took quite a long time to make because I had to grate the carrots by hand, but it was so delicious and was so nice to have salad that wasn't just a green salad for once. Also, the dressing was perfect, so easy.
