French Brioche

Bit of a niche question but hoping someone will know as Google isn’t helping so far!

We’ve just had a holiday in France and found a brioche which I would love to try and make.

Its was baked as two big swirls in a grease proof paper case and had a kind of sticky sugary base. Was sweeter than brioche I’ve had before and incredibly moreish.

Anyone seen any recipes like this?? I’m wondering whether to try a brioche dough rolled up and then make a kind of sugar syrup to pour in the base??
