What seemingly easy meal do you always get wrong?

Just for fun.... for me it's an omelette. I'm a pretty decent cook, enjoy spending time in the kitchen and can cook eggs in pretty much any other form. But can never get an omelette right... just ends up as eggy mess with other stuff added 😂

Help me feel better mumsnet!

I can do an omelette, but boy am I crap at frying eggs. Without fail they will be hard, or so soft that they disintegrate when I lift them. Thankfully DH is a dab hand .

I too can never get an omelette like they make in hotels- all neat and folder in half

Rosti- I grate the correct potato, squeeze out the liquid, cook for the required time. There might be some crunchy, tasty bits on the edge, but the centre is wet and soggy. I've left it cook longer- then its a rock hard mess!

Rice... probably three billion people eat it regularly, and I either get something stodgy, burned, with a skin a tiger couldn't pierce, or crunchy!

I cant microwave those frozen jacket potatoes you are supposed to microwave they are always frozen in the middle or nuked.

I can't make a tomato soup that is any better than fine. I'm generally a good cook, and I've tried so many recipes and methods over years for them all to turn out bland. I've just accepted that homemade tomato soup is not for me.

Rice is well worth the investment for a rice cooker if you eat it regularly. effort free, perfect rice every time.

I never used to be able to cook rice until I discovered baked rice. Now it works every time!

Crumble. The fruit bit is fine but the crumble never cooks through properly and there's undercooked bits no matter what I do.

Pancakes and omelette are the hardest ones for me. I've finally 'nailed' pancakes, but omelettes are hit and miss still, which is massively better than every single one being a miss.

Poached eggs, I have tried everything. I cannot get the happy state of runny yolk and cooked white, it's either runny white (yuk) or rock hard yolk.

Toad in the hole . The batter always goes flat and soggy even though I think I have followed the instructions to the letter .

Soft boiled eggs. They're always either snotty or rock hard. I follow the 3 minute rule and I still haven't mastered how to cook the damn things.

Perfectly boiled eggs with soft oak in the centre when I timed it and did the steps properly it worked but I can't instinctively do them I have to watch them like a hawk with a timer but I am so easily distracted that I suspect ADHD. I can do fluffly and perfect omelettes no problem though. I must have cooked them a 1000 times so had enough practise!

I can't bake cakes no matter which recipe I follow there is always something wrong. I weigh, I use fresh ingredients at room temp unless otherwise stated, I sift, I fold, my oven temp is fine but I'm still a shit cake baker.

Yorkshire pudding - always awful. I have tried so many supposedly foolproof ways over the years and they never turn out crisp and golden and light like my lovely late MIL's did. And I'm a Yorkshirewoman!

My omelettes have improved enormously since I found out they had to be cooked over a low heat. I've no idea where I got the idea sometime in my youth that they had to be cooked fast - watching a YouTube video a couple of years back by some television chef (can't remember who) was a revelation!
I've mastered quite a few things that I used to be very "Meh" at but, my pastry is okay at best and I can't do dosas at all.
I've tried all sorts of methods (and mixes) but "edible" (and then only just) has been the best I've achieved.

poached eggs, either hard, too runny, or no white as its all in the water. Also a fried breakfast, getting the bacon crisp, the sausages cooked through and just the right amount of singe, the eggs perfectly set white and runny yolk, the toast still hot and the beans neither too cold or over done, and the tea not weak or stewed. Its bloody exhausting and stressful, I could never run a B&B. I do not know how they do it.

Carbonara for more than two. Always end up with scrambled egg if I double the recipe.

Eggy things seem to be a theme so far. Scrambled eggs for me. I can cook a decent omelette but my scrambled eggs are rubbish. Whereas my DH, who hardly does any cooking, can chuck a bowl of eggs into the microwave and get a perfect result.

toad in the hole. Now I will say that I’m not the cook of the house and rarely do it but you’d think this was pretty simple to master - sausages and a batter. Nope. Always ends up too dry and crunchy (okay leaning more towards burnt!) on the outsides and still raw and flat and soggy in the middle. How is this so hard to make?? I’ve tried altering the oven temp but to no avail.

These are the only way I can poach an egg. Love them.

Pizza-its either brunt to a crisp or still frozen
Toad in the hole-never get that right,but I make a smashing Yorkshire pud
Oven chips-always soggy
Pasta-soggy mess
Rice-soggy,sticky and a huge lump of it

I can cook most other stuff!
