Anyone got a recipe for a tasty veggie casserole?

Have root veg and various beans/lentils.
Anyone know how to make a deliciously tasty veggie casserole?

I do a simple but tasty one which always goes down well with ds and dh. Here goes

Chop the following veg:
3 Carrots
2 parsnips
1 medium sized swede
3 sticks of celery
1 medium onion

Put them all into a BIG casserole pot. Add a tin of beans and sprinkle some mixed herbs. Drizzle some olive oil over them and make sure they're evenly coated.

Heat up a tin of tomatoes to boiling point and pour over the veg. Add at least a pint of hot vegetable stock so that the vegetables are submerged in the liquid. Now stir the pot so that the liquids mix.

Pop it into the oven at around gas mark 4ish for 2 hours.

I like adding veggie sausages and suet dumplings on top about half an hour before it's ready.
