Quick Meal ideas, vegetarian preferred please

It’s just me and DH at home for the next few weeks and I’m completely stuck in a rut food wise.

I don’t eat meat, DH does but he also enjoys meals that I eat so I thought now’s a good time to try a few new things.

Things we like:
eggs, cheese, salmon, prawns, pasta, potatoes, most veg,

Im not keen on most quorn products or stew type things.

Has anyone got any quick, easy (will be cooking them after a full day at work) meal ideas please? (Any lunch ideas also greatly appreciated!)

Sheet of puff pastry
Spread with grainy mustard
Cover with sliced shallots
Grate cheese over
Bake

Sheet of puff pastry
Cover with nice onion chutney
Cover with sliced Castello brie
Dots walnut halves over
Drizzle with honey
Bake

Dice an onion and 2 courgettes (chuck the seedy bit) plus chop a couple of cloves of garlic.
Fry. Add a half teaspoon of chilli flakes or some fresh red chilli.
Add garlic and herb Philadelphia (the intense one is great)
Warm through whilst cooking pasta
Add some pasta water to thin the cheesy sauce

Fried egg, chips and beans with bread and butter. I could eat that every night!

Cook sliced mushrooms with some garlic, add half a tub if creme fraiche & half a Knorr stock pot thing. Stir into cooked pasta (put some chopped tenderstem broccoli into the pasta for the last 5 mins) with a handful of parmesan. Yum.

You can also sub the mushroom & broccoli for salmon & peas.
