Can anyone share a recipe for a nice mayo free coleslaw? I just tried creating a random concoction but it was horrible.

This one is a firm favourite in our house. Whatever doesn't get eaten is normally stir fried with rice the next day.

I do a basic vinaigrette with Dijon etc.
extra Virgin olive oil, salt, white wine vinegar and Dijon,
i usually do caramelised onions and bacon with rocket and parsley and this dressing

Add some pickled beetroot and/or an extra splash of the beetroot vinegar, lemon, orange or lime juice, bit of yoghurt (vegan works fine) if you want a creamy texture, fresh ground pepper, bit of sea salt - then seal up the Tupperware tub and leave it in the fridge at least overnight.

I use Greek yoghurt, apple cider vinegar, Dijon and chopped fresh chives and parsley with a trad cabbage/ onion/carrot shred. Never fails me!

Is it the taste or egginess of Mayo you are avoiding?

I used to use fake Mayo (made with olive oil) and mix with yoghurt (50/50)
